Description

The Afon Mêl bee farm and meadery have teamed up with the Welsh Penderyn whisky distillery to produce a different take on their Heather Mead. Part of a limited run of 400 bottles, this mead is matured in ex-bourbon casks that were used to mature Penderyn whisky.

In this mead, the strong aromas of the heather honey find a worthy challenger in the strong oak and vanilla flavours of the bourbon cask. Starting with a slightly subdued heather smell and a gentle whisky note, it blossoms out almost immediately into a sweet and caramel-like taste that then fades into a light woody finish with a slight heat and hints of vanilla. Salty cheeses might bring out the caramel note more, while its intensity could prove a good match to rich and spicy desserts.

Meads from the Afon Mêl bee farm and meadery are sweet, complex meads with flavour profiles comparable to sherry or port. The meads are matured in the vats for roughly 2 years, which gives the flavours and aromas plenty of time to blend and develop. This also adds sherry-like notes to the aftertaste, which can linger for a while afterwards. Best enjoyed in small sherry glasses or snifters.
