Brewed from honey alone, the Tavern Mead is what is commonly referred to as a “traditional mead”. Unlike many other traditional meads however, it is considerably lighter in both alcohol and sweetness. One consequence of this is that the floral notes of the honey stand out more. A sip of the tavern mead starts with remarkably low-key sweetness that quickly makes way for a honey aroma that sits somewhere between floral and apple-y. The alcohol does not so much bite so much as nibble a bit at the end.
This is a dangerously drinkable mead with a simplicity that may appeal to novices in the world of mead, but even seasoned mead aficionados may appreciate this lighter take on a classic. Best served in a goblet or wine glass, either cellar cool or even lightly chilled. The brothers have suggested mixing with tonic and garnishing with rosemary. This is obviously sacrilege, but given that they seem to know what they’re doing, maybe it’s worth a try.
Hive Mind is a small meadery in southern Wales founded by two brothers, Matt and Kit. They specialise in a mix of traditional and lighter sparkling meads and braggots using purely UK honeys in addition to honey from their own hives. Their meads tend to emphasize flavours and aromatics over heavy sweetness, and their aim is to demonstrate the versatility and eco-friendliness of mead and honey in general.
