The Rookery is a rare Scottish meadery. Focusing on purity as well as historical accuracy, their meads are made using ingredients that would have been available to people in medieval times, where possible using locally sourced and foraged ingredients.
The fermentation of strong Scottish heather honey tempered by a milder polyfloral honey up to an abv of 17% yields a warming mead with only a mild sweetness. This serves as a backdrop to the clear flavours and aromatics that make these meads quite popular among whisky-drinkers and as a lighter alternative for a post-meal tipple.

The Rookery’s Mountain Ash mead is one of the driest meads in their range, and quite possibly the driest one in the UK at time of writing. Fermented with rowanberries, it has both sharpness, tannins and a fresh herby note that will thrill those mead-drinkers who also like drier white wines. This is not one for a large glass, however, but a drink to be served in small quantities either cool or cold.
