The Rookery is a rare Scottish meadery. Focusing on purity as well as historical accuracy, their meads are made using ingredients that would have been available to people in medieval times, where possible using locally sourced and foraged ingredients.
The fermentation of strong Scottish heather honey tempered by a milder polyfloral honey up to 17% yields a warming mead with only a mild sweetness. This serves as a backdrop to the clear flavours and aromatics that make these meads quite popular among whisky-drinkers and as a lighter alternative for a post-meal tipple.

The Spruce Mead is made by adding the young tips of spruce trees to the fermentation. Picked during the spring, these tips are edible when new, and they impart a pleasant conifer aroma as well as a surprisingly fresh sweetness, with very little in the way of bitterness. While the woody notes appeal to whisky drinkers, the light sweetness gives it a broad appeal. Serve cool in wide glasses to get the most of the aroma.
Heathens have been known to mix this mead with ginger ale or tonic water, and some even with whisky or gin to give it an extra bite, but we had to go for a lie down when Sloe Gin cocktails were mentioned.
